Ingredients:

For the Riberry Syrup:
- 1 cup frozen or fresh Riberries
- ¾ cup water
- ½ cup sugar (or honey for a twist)
- ½ tsp lemon juice (optional)

For the Cocktail:
- 45ml gin or vodka
- 30ml Riberry syrup
- Soda water or tonic
- Ice
- Lemon slice or edible native flowers (for garnish)

To Make the Syrup:

  1. In a small saucepan, combine Riberries, water, and sugar.
  2. Bring to a gentle boil, then reduce to a simmer for 10–12 minutes until the Riberries soften and the mixture thickens slightly.
  3. Strain the mixture through a fine sieve, pressing to extract all the syrup.
  4. Stir in lemon juice, if using. Let cool. Store in the fridge for up to 2 weeks.

To Make the Cocktail:

  1. Fill a glass with ice.
  2. Add 45ml of gin or vodka, 30ml of Riberry syrup, and top with soda or tonic.
