Ingredients:

  • 500g Davidson Plums (fresh or frozen)
  • 500g raw sugar or honey
  • 500ml water
  • Juice of 1 lemon (optional, enhances tartness)
  • 1 tsp vanilla extract (optional, for depth of flavour)

Method:

  1. Prepare the Plums – If using fresh Davidson Plums, rinse them well and cut them in half. If frozen, allow them to thaw slightly.

  2. Simmer – In a saucepan, combine the plums, sugar (or honey), and water. Bring to a gentle boil over medium heat, stirring occasionally to dissolve the sugar.

  3. Extract Flavour – Reduce heat and let the mixture simmer for 20–30 minutes, allowing the plums to break down and release their deep magenta colour and tangy flavour.

  4. Strain – Remove from heat and strain the liquid through a fine sieve or muslin cloth into a clean bowl or jug, pressing down on the solids to extract as much juice as possible.

  5. Enhance the Taste – Stir in the lemon juice and vanilla extract (if using). Taste and adjust sweetness if needed.

  6. Bottle It – Pour the cordial into sterilised glass bottles while warm and seal tightly. Let it cool completely before storing in the fridge.
